When Stone developed this pleasantly bitter, deliciously lemony IPA, they took it as an opportunity to do something they'd spent over a year researching and perfecting: reducing the amount of gluten in the beer to the degree that nearly everyone could experience Stone's no-holds-barred approach to craft brewing.

    An enzyme added during the brewing process called Clarity Ferm did the heavy lifting, cutting the bee's gluten content to well below the threshold of 20 parts per million required by the Food and Drug Administration to label a product gluten-free. What it did not diminish by any stretch was this IPA's flavor.

    Jelly Beans Triple IPA - Heavily Dried Hopped | ABV: 9.5% The blend was designed based on hops that contain the most soluble aroma compounds that survive heat, fermentation and CO2 scrubbing.The result is a product that when used in the whirlpool results in a beer that is already high in aromatic fruity compounds even before dry hopping. We also used it during active fermentation to take advantage of biotransformed compounds as well as maintaining the survivable compounds that are not transformed. Finally we hit it with a post fermentation dose of this blend in conjunction with heavy handed additions of Citra and Simcoe. The result is a TIPA displaying a wide variety of tropical, stone fruit and citrus fruit that is soft in the body and creamy in mouthfeel.     SANTAKO West Coast IPA | ABV: 6.4% We’ve based this on one of our recent WCIPA’s, Plasticity, but have replaced the Cascade portion of the dry hop with Amarillo to push the orangey citrus character further. Combined with Citra, Simcoe and Columbus the aroma immediately presents plenty of dank pine resin, marijuana, orange and grapefruit zest and some slight peachiness. The initial taste follows with more citrus and a little kiss of sweetness before finishing with a dry and firm bitterness that does’t overstep the mark. The body is on the leaner, drier side yet with the little addition of a very light caramel malt, a slight sweet touch blends with the bitter finish to give some of that sticky, oily, resinous character that we love in West Coast IPA. This is a west coast IPA designed with drinkibility in mind and what’s more it’s even Gluten Free!     Any Second Now IPA | ABV: 6.6% This hops carries a huge oil content of 3.6ml/100g which is double what Mosaic normally clocks in at. This isn’t everything when it comes to judging how aromatic a hop is but it is certainly a good indicator. Being described as a hop with big notes of cantaloupe melon, lemon, pineapple and orange we decided some mango heavy mosaic would compliment it nicley. Using one of our base IPA malt bills this allows us to show what this hop can do as the main aspect of a dry hop charge. With a creamy body that gives way to a slightly drier finish showing a refined but refreshing bitterness, these are the types of IPA’s that we love to drink!     This ain't no just-add-juice approach. This one is for adults. Stone uses bountiful whole tangerine pure, which brings pithy, crisp bitterness to the citrus flavor. In addition to the complexities of the tangerine, the likes of which you can only get by using the whole fruit Stone judiciously employ just a hint of the whole pineapple for a backnote (you'd likely not even pick it out of the mix if we didn't tell you it was there).
