Light grainy malt base with some toasty and breadcrumb-like secondary tones. Intense hop aroma with citrus fruits (lemon zest, tangerines, grapefruits), stone fruits (peaches, apricots, mangos), pine nuts, perfume, and dank (grassy, marijuana-like characters). Very low bitterness. Velvety mouthfeel.
An ale brewed with Japanese wild breed mandarin “Fukure Mikan”.
The refreshing flavor of this mandarin complements well with the citrusy hops.
The Dai Dai IPA shows a perfect balance between hop bitterness and the umami flavor.
ABV: 6.6% | IBU: 53
A collaboration India pale lager brewed with Hong Kong’s favorite jasmine rice and Japanese whole leaf hops brought over from our friends at Coedo Brewery. The jasmine rice helps build a dryer lager base to allow for the Shinshuwase and Kaikogane hops to shine through with their floral and orangey bouquet. The beer is moderately bitter on the palate from the hefty hop dosage but finishes crisp like a lager.
ABV: 8.9% | IBU: 110
A robust Double IPA with intense hop flavors of tangerines, dried pineapples and white oak. The complex malt characters of toasted bread and malt candy help balance the hop flavors but still allows the beer to finish strong with a sturdy bitterness.
